game
Game usually has quite a strong taste, which is why game wines are primarily full-bodied reds. A richly flavoured beer is also an ideal partner to strongly flavoured game dishes.

clams, mussels, scallops and oysters
Shellfish have a mild, delicate taste. Their light and nuanced flavours are best suited to similarly light yet aromatic beverages. An exception to this are hearty stouts and porters, which are a classic accompaniment to oysters.

casseroles
Casseroles are usually rich in flavour yet quite smooth due to their long cooking times. A similarly rich and smooth beverage will therefore work well with them. If your food is very fatty, you can cut it with a well-balanced beverage.

mild cheeses
Pale, fresh and mild cheeses are best enjoyed with similarly fresh and mild beverages. For example, a crisp and acidic white wine, a light red wine, or a flavoursome beer.

Taste
Stouts and porters are robust top-fermented beers with a distinctive character. The colour and strong flavour come from dark roasted malts.
You can also discern hints of bread, coffee and dark chocolate in the toasted flavours.
Tips for useThe differences between stout and porter have been lost over the course of history, but stout has traditionally been heavier. There are examples of both beer styles ranging from sweet to dry and mild to strong.
Try stout and porter with smoked lamb, pepper cheese or dark chocolate cake.
How to serveStouts and porters are best served chilled, at 10–14°C. Chilling a bottle from room temperature to the perfect serving temperature takes about one hour in a fridge.
